Blackened Chicken and Cilantro Lime Quinoa

Blackened Chicken and Cilantro Lime Quinoa


Just FYI, I did make an adjustment to the recipe. It says to use the zest and juice from 2 limes. In my opinion, it is WAY to much lime flavor. I would suggest just doing 1 lime and adding a little bit at a time. I think I only used half of the juice and that was enough lime taste for us. 


We also tried the recipe with Salmon. So yummy!! 


The AWESOME thing about this recipe is that not only does it taste good, it is healthy! I'd actually never had Quinoa before so I read a little bit about it on the internet. Here are a couple of cool things about Quinoa:
  • It is known as the "superfood" of South America
  • It was once used by Warriors in South America to stay strong during battle
  • It is packed with protein. 
  • Good source of magnesium which can help with migraines and high blood pressure
  • Helps with digestion
  • Acts as an internal cleanser. If eaten regularly, it can help prevent constipation and bloating. 
  •  Good source of calcium--which helps your bone and teeth health, helps regulate the heart, and helps with nerve and muscle function
  • Gives you a good dose of iron--this helps deliver oxygen to the blood, which boosts energy and brain power. 
  • Daily intake of quinoa decreases levels of inflammation in fat

Pretty crazy, huh? After reading all of that, I think I'll find some more recipes with Quinoa!
